Shrimp Puffs

List of Ingredients
2 slices of whhite bread, crusts removed and torn into small bits
1 egg lightly beaten
1/3 cup mayonnaise
8-oz baby shrimp chopped*
1/4 cup each, red pepper and onion
1 tsp dijon mustard
1/4 tsp fresh ground pepper (I have also used a pinch of red) or sometimes Old Bay seasoningRecipe
Oven set at 375�F. Combine the bread, egg and mayonnaise and mix well. Add all remaining ingredients and blend well. Chill or if using immediately shape into small balls (use a Tbs as a measure). Arrange on a baking sheet and bake till browned and puffed about 25 minutes. Check after 20 mins. ~ Serves 4
Posted by: Appy_Girl (yep they really puff up): This is a T&T recipe and it is very easy to make ~ I make up the mixture early in the day and then shape them into small balls when ready to "Bake" not Deep Fry ~ *I also like to use Fresh Shrimp instead of the canned. I usually use 5-6 medium, cooked and cleaned for the full recipe ~ I hope this one will appeal to a few and that you find them as tasty as we do ~ Janie ~
