Cinnamon Bread

1 1/2 C granulated sugar, divided
2 tsp ground cinnamon
2 C flour
1 1/2 tsp baking powder
1/2 tsp salt
1 egg, beaten
1 C milk
1/3 C cooking oil* (added 1 t. more)
1 t. vanilla* (added)Recipe
Preheat oven to 350�F. Grease and flour a 9x5x3 inch loaf pan. Mix 1/2 C of the sugar with the cinnamon and set aside. In a large mixing bowl, combine the flour, baking powder, salt and remaining sugar. In a separate bowl combine the egg, milk and oil; add to the flour mixture. Stir just until moistened. Pour half of the batter into the prepared pan. Sprinkle with half the cinnamon/sugar mixture. Repeat with remaining batter and cinnamon mixture. Draw a knife through the batter to marble the bread.
Bake for 45-50 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes. Remove from pan. Cool.
Wrap and store bread overnight before slicing. Prep time: 15 min. Serves 12.
Posted by: TXSue: This is from the newest Penzey's ONE magazine and is terrific. I added a tsp of vanilla and about a tsp more oil. It's almost like a really moist cinnamon crunch pound cake. It says to cool the bread, wrap and store overnight before slicing - this really did make it better. I highly recommend this and hope you enjoy it!
