    1 Tbl butter
    1 lb andouille sausage (used hillshire farm smoked sausage)
    1 lb chicken breast meat cut into bite size pieces (used 1 large breast)
    favorite creole seasoning (used liquid smoke, penzey's chipotle chili powder, ex spicy mrs dash)
    1 chopped onion
    1 chopped green bell pepper (used red pepper)
    2 stalks chopped celery
    3 cloves garlic minced
    1 (14 oz) can chopped tomatoes, not drained (two cans would be fine too with no tomato paste)
    jambalaya seasoning (did not have any - skipped)
    2 cups chicken stock (used two 14 oz cans stock)
    1 cup tomato sauce (skipped)
    1 cup beer (skipped)
    2 tsp favorite hot sauce (tabasco-a few shakes, but less than 2 tsp)
    2 cups uncooked rice (uncle ben's)

    Add butter to hot dutch oven and sear andouille sausage, scraping pan bottom. Add chicken and brown. Add favorite creole seasoning to taste. Add onion, bell pepper, celery, garlic and tomatoes. Stir in jambalaya seasoning. Cook 5-8 minutes until onions sweat and become translucent. Add chicken stock, tomato sauce, beer and hot sauce. Bring to a boil and simmer for 15 minutes. Add uncooked white rice.

    Transfer to a long baking dish and cover tightly with foil.

    Bake at 350�F for 1 hour. Uncover, stir and let sit for 10 minutes.
