    Baked Chicken Cacciatore

    List of Ingredients




    6 boned and skinned chicken breasts
    1/2 pound mushroom, sliced
    1 large bell pepper, 1/2 inch slices
    1 medium onion, chopped
    1 1/2 cups chicken broth
    6 ounces tomato paste
    3/4 cup red wine
    8 ounces linguine, cooked and drained

    Cut chicken into 1 inch cubes and saute in 1/2 teaspoon oil until lightly brown. Set aside. Saute mushrooms, onions, and bell peppers until tender. Add broth, tomato paste and wine, simmer uncovered for 20 minutes and stir frequently. Add chicken and simmer for 20 minutes. Put linguine in baking dish (9x13), pour chicken suace over linguine, top with fresh grated parmesan cheese. Bake at 350 degrees, uncoveered for 30 minutes.
