    List of Ingredients

    • 1-pound chicken breast, cut into 2 inch pieces
    • 1 can (14 1/2oz) no salt diced tomatoes
    • 1 medium bell pepper, diced
    • 1 medium onion, chopped
    • 3 clove garlic, minced
    • 4 cups of hot cooked brown rice
    • Carribean Spice Mix


    1. Caribbean seasoning

      mix together in a bag:
      *2 tblsp oat flour
      *2 tsp ground allspice
      *1/2 tsp paprika
      *1/2 tsp pepper
      *1/2 tsp cumin
      *1/4 tsp ground red pepper
    2. shake chicken in bag to coat with seasoning mix.
    3. Spray nonstick pan with spray and add chicken. Stir fry over medium heat 7-10 min or til no longer pink.

    4. Stir in tomatoes, bell pepper, onion, and garlic.
      Heat to boiling, then reduce heat. Cover & simmer 5-10 minutes or until vegetables are the way you like
    5. Serve chicken mixture over hot rice
