Salsa Chicken Fiesta - 4 Points

List of Ingredients
2/3 cup Bisquick Heart Smart mix
2 Tbs water
1/4 cup fat free egg substitute, or 2 egg whites
1 1/2 cups shredded reduced-fat Cheddar cheese (we actually used Cheddar-Jack)
3 (about 1 lb) boneless, skinless chicken breasts, cut in to 1/2�� cubes
1 1/4 cup salsa
Recipe
1. Heat oven to 400. Spray an 8�� or 9�� pan with non-stick spray. Combine Bisquick, egg substitute/whites and water and spoon/spread in to pan. Top with 1 1/4 cups of the cheese
2. In a non-stick skillet sprayed with non-stick spray and over medium-heat, saute the chicken until the outside turns white (do NOT cook completely). Stir in salsa and heat until hot.
3. Spoon chicken/salsa mixture over batter/cheese, leaving 1/2�� room on all sides
4. Bake 22 to 25 minutes or until the edges are dark golden brown. Sprinkle with remaining cheese and put back in oven for 1-3 minutes or until cheese is melted.
Serve with lettuce, diced tomatoes and fat-free sour cream, if desired (don�ft forget to add the Points for the Sour Cream).
Cost? The Bisquick was pretty much free (I ended up paying pennies per box), chicken was about $1 (I never pay more than $2/lb), the egg whites cost about $.25, the cheese was about $1.50 and the salsa I probably paid $1 for (based on what I usually pay).
