    Coco1nut Flour Carrot Cake

    My adaptation of recipes from Coconut Flour: The Ultimate Collection and Our PaleoKitchen


    Recipe Introduction


    I have 2 grandchildren with food allergies and 1 who has celiac disease. Therefore, I am looking for recipes for food that we can all have. So far, the boys love it and we need to have Stella test it.


    List of Ingredients


    • 1 C coconut oil, melted
    • 12 eggs
    • 1 t vanilla
    • 1 C sugar or xylitol or coconut nectar
    • 1 t salt
    • 1 1/2 t cinnamon
    • 1 t nutmeg
    • 1/2 t ground cloves
    • 1 t turmeric
    • 1 C sifted coconut flour
    • 1 t baking powder
    • 2 C grated carrots


    Instructions


    1. Combine oil, eggs and vanilla. I did it in Blendtec.
    2. Mix sweetener, salt and spices and add to wet mixture.
    3. Combine coconut flour with baking powder and add to mixture.
    4. Fold in carrots.
    5. Put batter into greased pan(s) 2 8in rounds, 8"x 13" or 9 inch square for thick cake.
    6. Bake in preheated 350 degree oven for 35 - 40 minutes.
