    Gluten free rhubarb pie

    Mom's pie with alterations


    List of Ingredients


    • 2 cups almond meal
    • 1/4 t salt
    • 1 egg
    • 2 T coconut oil
    • Rhubarb, cup into small pieces
    • 3 eggs
    • 1 1/2 t powdered stevia
    • 1/2 C Greek yogurt


    Instructions


    1. Put first 4 ingredients in blender until it is a ball or at least intragrated. Works fast in my Blendtec.
    2. Press into 9 inch pie pan.
    3. Fill with rhubarb. Generously sprinkle with cinnamon.
    4. Add stevia to a little water and liquify. Mix together with beaten eggs and yogurt.
    5. Pour over rhubarb.
    6. Put in preheated 350 oven. (325 for glass)
    7. Bake for 55 - 60 minutes until slightly golden.


    Final Comments


    I have not experimented with other sweeteners. The yogurt is a filler for the sugar.
