    CHICKEN AND GREENS

    List of Ingredients




    * 5-pound chicken, quartered
    * 1 onion
    * 1 carrot
    * 2 and 1/2 quarts water
    * 2 pounds spinach, kale, or chard
    * 1 teaspoon ground coriander
    * 3 cloves garlic, minced
    * 2 teaspoons salt
    * 1/4 pound butter

    Recipe



    Combine the chicken, onion, carrot, and water in a saucepan. Cook over medium heat for 2 hours, or until chicken is tender. Wash the spinach carefully. Drain well and dry thoroughly. Chop coarsely. Pound the coriander, garlic, and salt to a smooth paste. Melt the butter in a saucepan. Add the paste and chicken. Saut� for 10 minutes. Add the spinach. Cook over medium heat for 10 minutes. Correct seasoning. Serve with boiled rice. The chicken broth may be served separately.

    Note: Mlookhia is a unique and very popular Egyptian vegetable. The green vegetables substituted are similar in flavor, though not so bitter.
