    1 C. juice from lemons, limes or sour oranges
    1 tsp. salt
    1 tsp. freshly-ground black pepper
    1 1/2 C. dry white wine
    6 cloves garlic, crushed
    1 tsp. dried basil
    3 broiler chickens, quartered
    1/2 lb. butter, melted
    3 C. crumbled potato chips

    Recipe



    In a large bowl, combine the juice, salt, pepper, wine, garlic, and basil. Add the chicken pieces, cover, and marinate in the refrigerator for 4 hours, turning occasionally. Remove the chicken pieces and pat dry.

    Preheat the oven to 400�F. Dip each chicken piece into the melted butter and then roll in the crumbled chips. Arrange the chicken in a large shallow baking dish and bake uncovered for 1 hour.
