4 whole boneless, skinless chicken breasts
1 cup all-purpose flour
1 cup white wine
1 cup chicken stock/broth
4 tablespoons unsalted butter
2 tablespoons capers, drained
1 tablespoon fresh garlic, chopped
1 tablespoon fresh lemon juice
1 tablespoon fresh Italian parsley, chopped
� cup canola oil
Salt and pepper Recipe
� Preheat oven to 350 degrees.
� Heat canola oil in a large, heavy skillet over medium-high heat. Season the flour with salt and pepper.
� Dredge the chicken breasts in the flour to coat all sides. Brown the chicken on each side in the hot oil.
� Transfer chicken to a glass baking dish and finish in the oven, about 30 minutes.
� Meanwhile, make sauce by draining the oil from the pan and deglazing with the wine. Add the capers, garlic, lemon juice and stock/broth, and reduce the liquid by half.
� Whisk in the butter, one tablespoon at a time, and then add the parsley. Season to taste with salt and pepper.
� Remove cooked chicken from oven, pour the sauce over it and serve.
Serves 4.
