FLOWER DRUM SONG CHICKEN

4 whole chicken breasts, de-boned,
skinned, and cut in 1-inch cubes
1 T. cornstarch
1 T. dry sherry
1 T. soy sauce
2 T. peanut oil
1/4 lb. fresh mushrooms,
coarsely chopped
1 green bell pepper, coarsely
chopped in 1-inch pieces
1 heaping T. hoisin sauce
Salt, to taste
1/3 C. cashews
Recipe
Sprinkle chicken pieces with cornstarch and toss until thoroughly coated. Add sherry and soy sauce and marinate for at least 1/2 hour.
Heat oil until faintly smoking. Add chicken and saut� quickly until barely done. Add mushrooms and green pepper, and saut� for approximately 45 seconds.
Add hoisin sauce, salt and cashews, and toss until thoroughly mixed. Serve immediately.
