Risotto with Spicy Moose Sausage

List of Ingredients
1 lb. spicy moose sausage, ground (may substitute another ground sausage)
1 � cups chopped onion
2 large cloves garlic, minced
1 � cups medium-grain white rice
2 to 2 � cups low-salt chicken broth
2 cups Alaskan Stout
1 � cup Parmesan cheese, grated
� cup fresh parsley, chopped
Recipe
Saut� sausage, onion and garlic in heavy saucepan over medium heat until onion is tender, about 8 minutes.
Add rice and stir 1 minute. Add 2 cups broth and 2 cups Alaskan Stout. Reduce heat to medium-low and simmer until liquid is absorbed, stirring frequently, about 15 minutes. Continue to simmer until rice is just tender and mixture is creamy, adding more broth � cup at a time and stirring frequently, about 6 minutes.
Add � cup cheese and � cup parsley. Season with salt and pepper to taste. When ready to serve, sprinkle risotto with remaining parsley, pass remaining cheese separately.
