    � 2# Boneless, skinless Chicken thighs or breasts, cut into 1�x3/4� strips
    � 1/2 c. flour
    � 1/4 c. oil
    � 2 c. chopped onions
    � 3 bay leaves
    � 1 1/4 c. green pepper, chopped
    � 1 jalape�o pepper, minced
    � 2 c. carrots, cut in rounds
    � 1 15oz.can black eyed peas, drained
    � 4-6 garlic cloves, minced
    � 1# ham, diced
    � 1 c. chicken stock
    � 1 can (12oz) chopped tomato
    � 1 c. Favorite bbq sauce,
    � 1 tbsp. Worcestershire sauce
    � 1 15oz can sweet corn
    � 1 10oz bag fresh spinach (cut in ribbons)
    � 1 tsp cumin
    � 1 tbsp. fresh thyme
    � 1 tbsp. oregano
    � salt, pepper & hot sauce to taste

    Recipe



    Step 1: Toss chicken with 1/2 c. of flour seasoned with salt & pepper.
    Step 2: Heat oil �til hot and brown chicken in batches. Remove from pan and set aside.
    Step 3: Saut� onions, peppers & bay leaves �til soft. Add ham and garlic and cook 2 minutes.
    Step 4: Add browned chicken to large pot with juices, then add chicken stock, BBQ, Worcestershire, and carrots. Bring to a boil then simmer �til carrots and soft, approx. 15-20 minutes.
    Step 5: Add black eyed peas, corn, fresh spinach, cumin, thyme and oregano and simmer for 15 minutes, or until all flavors are blended.
    Step 6: Adjust taste with salt, pepper, and hot sauce.
