Wings 1kG
1kg - Chicken wings with 2 bone wings [Cut at joint into 2]
200g - Plain flour
50g - Celery salt
Buffalo mop 1KG
275g - Butter Unsalted
35g - Fresh Garlic [Peeled and crushed]
220g - Tomato paste
275ml - White wine Dry
65ml - Cider vinegar
130ml - Tabasco
2g - Salt
Blue cheese dressing 1KG
700g - Blue cheese Dochelate Crush with a fork
190g - Sour Cream
95g - Mayonnaise Fresh
15ml - White wine vinegar
Recipe
Season the flour with the celery salt and dust the wings. Preheat oil to 190oC Deep fry the wings until the internal temp. is 85oC Melt the butter in a pan and add the garlic, when cooked stir in the tomato paste, cook for 5 mins. Add the rest of the ingredients and stir until completely emulsified. Toss the hot wings in the sauce and serve immediately. Add the sour cream and mayonnaise to the blue cheese, dilute with white wine vinegar, serve on the side Special Equipment Deep fryer
