    Eggs make a great, quick, economy supper -- but our Goat Cheese and Onion Frittata has an unmistakably uptown taste. Serve with mixed green salad with lots of cherry tomatoes and your favorite low-fat vinaigrette

    List of Ingredients




    2 tsp. olive oil
    1 - sweet onion, such as Vidalia, sliced
    1/2 tsp. fresh thyme or pinch dried thyme
    1 - whole egg
    4 - egg whites
    3 oz. crumbled goat or feta cheese

    Recipe



    1 Preheat oven to 400 degrees F. Heat 1 tsp. oil in an ovenproof skillet over medium-low flame. Cook onions until soft and beginning to brown, about 10 minutes. Sprinkle with thyme, salt and pepper. Remove onions from pan and set aside: do not wash pan.
    2 Stir whole egg, egg whites and 2 tbsp. water briskly together with a fork until well blended. Season with pepper and a pinch of salt. Return skillet to the heat and add remaining 1 tsp. oil. When hot, add beaten eggs and cook for 2 minutes.
    3 Distribute cooked onions over eggs and sprinkle with cheese. Transfer skillet to the oven. Bake until cheese melts and frittata is set, about 8 minutes. When taking skillet from the oven, don't forget to use a heat pad! Slice and serve.
