    Adobo is considered the national dish of the Philippines. There are many versions, some tart and some sweetned with coconut milk. I prefer the tart version.

    List of Ingredients




    1 1/2 lbs. pork boneless shoulder
    1 1/2 lbs. chicken legs or thighs
    3/4 C. water
    1/3 C. white vinegar
    3 garlic cloves, chopped
    1/4 C. soy sauce
    salt & pepper to taste

    Recipe



    Trim fat from pork; cut into 1" cubes. Heat pork, chicken, water, vinegar, garlic, soy sauce, s&p to boiling in a dutch oven/heavy pan; reduce heat. Cover and simmer until pork and chicken are done, 45-55 minutes.

    Remove pork and chicken, skim fat from broth. Also remove skin from chicken. Cook the broth uncovered until reduced to about 1 C. or so.

    Heat 1T. veg. oil in skillet over medium heat until hot. Cook the chicken and pork until brown on all sides.

    Serve over hot cooked white rice with the broth poured over it.
