    Espresso Spread:
    4 oz. cream cheese, softened
    1 Tbs. sugar
    1/2 tsp. instant coffee granules
    1/2 tsp. vanilla
    1/4 cup mini chocolate chips

    Muffins:
    2 cups flour
    3/4 cup sugar
    2 1/2 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. salt
    1 cup milk
    2 Tbs. instant coffee granules
    1/2 cup butter or margarine, melted
    1 egg, beaten
    1 tsp. vanilla
    3/4 cup mini chocolate chips

    Recipe



    In a food processor or blender, bombine spread ingredients; cover and blend well. Chill until use. In a bowl, combine flour, sugar, powder, cinnamon and salt. In another bowl, stir milk and coffee granules until coffee is dissolved. Add butter, egg and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in mini chips fill greased or paper-lined muffin cups 2/3 full. Bake at 375 degrees for 17-20 minutes. Cool in pans five minutes and remove to rack. Serve with spread.

    Yield: 14 (1cup spread)
