    Mango & Red Onion with Citrus Dressing

    List of Ingredients




    3 mangoes, fully ripened
    1 red onion
    1 pound fresh pea shoots or gourmet salad mix
    3 Tablespoon eggbeaters
    1/4 cup apple cider vinegar
    1/4 cup citrus juice (orange, tangerine, grapefruit, lime, etc.)
    1 Tablespoon orange zest
    1/2 teaspoon dry mustard
    salt and black pepper to taste
    1/3 cup light olive oil

    Recipe



    Method

    Cut the mango in half on either side of the pit lengthwise. Slice the flesh into long strips trying to not cut through the skin. Gently scoop the fruit in to a bowl and set aside. Peel and halve the onion. Slice into paper-thin half moons and soak for 2-3 minutes in ice water. Drain the onions well and wrap in a clean towel. Soak the greens in a large tub of cold water, drain and spin dry.
    Whisk the vinegar, juices, zest, and spices together in a large stainless or glass bowl. Slowly whisk the oil in until emulsified. Chill until ready to serve.
    Make a small mound of the greens on a well-chilled plate. Gently toss the mango and red onion with half of the dressing. Spread the fruit mix over the greens and drizzle the remaining dressing over the greens.
