    South Beach Diet Phase 1


    List of Ingredients


    • 1/4 cup olive oil
    • 1 med. onion,chopped
    • 1 med. green pepper,seeded and chopped
    • 2-3 cloves garlic,finely chopped
    • 1 lb. of lean ground beef
    • 1/2 lb. of boiled ham,finely chopped
    • 1/2 cup of fresh tomatoes,chopped
    • 1/4 cup of pimento-stuffed green olives,cut in half and a Tbsp of its juice
    • 1 Tbsp salt
    • Pepper to taste
    • 1/2 cup of cooking wine
    • 1/2 Tbsp seasoning,such as Accent Seasoning or Mrs. Dash


    Instructions


    1. Heat the oil over low heat until fragrant,then add the onion,pepper,and garlic,and cook,stirring,10 min.
    2. Add the beef and ham and cook,stirring until brown(the ham will stay pink),10-15 min.,breaking up large chunks with a wooden spoon. Drain off any excess fat.
    3. Add the cooking wine(or red wine if you are on Phase 2),tomatoes,salt and seasoning,along with the olives and a Tbsp of the olive juice. Continue cooking for 10-15 min.
