Pork Chops with Fennel and Lemon

List of Ingredients
- 4 (6 oz.) bone-in pork chops,about 1/2 in. thick
- 1 Tbsp extra-virgin olive oil
- 1 large fennel bulb,sliced into 1/2 in. strips
- 1 small onion,thinly sliced
- 1 cup lower-sodium chicken broth
- 2 Tbsp fresh lemon juice
- Salt and freshly ground black pepper
Instructions
- Season pork chops with salt and pepper. Heat oil in a large skillet over med-high heat. Cook pork chops until lightly browned,about 2 min. per side. Transfer to a plate.
- Add fennel and onion to the same skilley and cook until lightly browned and softened,about 3 min. Add broth and lemon juice,bring to a simmer,cover and cook until fennel is crisp-tender,about 5 min. Uncover and simmer until liquid is reduced slightly,about 3 min.
- Add pork back to the skillet anc cook until heated through,about 2 min. Season with salt and pepper and serve hot.
