    Servings: 6 WW points per serving: 5

    List of Ingredients




    1 T unsalted stick margarine
    2 onions chopped
    2 celery stalks diced
    1 carrot diced
    3 garlic cloves, minced
    3 T flour
    1/4 tsp black pepper
    6 4oz skinless boneless chicken breasts
    1 T olive oil
    1 14.5oz can diced tomatoes
    1 c chicken broth
    1/2 c dry white wine (or use more chicken broth)
    1 tsp dried thyme

    Recipe



    ** Preheat oven to 325.
    ** In a large skillet mest margarine and add onions, celery, carrots, and garlic. Cook, stirring as needed until softened (about 5 min). Transfer to a 3 quart casserole.
    ** In a gallon size sealable plastic bag, combine flour and pepper (I add season salt too). Add chicken and shake to coat.
    ** In the same skillet heat oil. Add chicken and brown 2 minutes on each side. Arrange chicken on top of the veggies in casserole.
    ** Return skillet to heat and add in the tomatoes, broth, wine, and thyme. Cook, scarping up the browned bits form bottom of pan, until liquid comes to a boil. Pour over the chicken.
    ** Bake, covered, until chicken is cooked through and veggies are tender, about 1 hour.
