    Serves: 6 - This can be stuffed with anything you would normally put on a pizza, the following is just one example.

    List of Ingredients




    Make Quick & East Pizza Dough according to recipe or use your favorite pizza dough
    1 egg, slightly beaten
    1 c. ricotta or cottage cheese (I use fat-free or low-fat)
    1/4 c. grated Parmesan cheese (If using powdered use 1/16 c.)
    1/4 c. chopped fresh parsley or 1/16 c. dried parsley
    Pinch of nutmeg
    1/2 to 2/3 c. shredded mozzarella cheese (I use non-fat or low-fat)

    Divide dough into 6 pieces. Form each piece into a ball, and roll or pat each ball into a 6 or 7" circle.

    In a large bowl, thoroughly mix the egg, ricotta/cottage cheese, Parmesan, parsley and nutmeg. Place several tablespoons of this mixture in the center of each round of dough, dividing the amount of filling equally between the six dough circles.

    Sprinkle mozzarella over the filling, fold the dough circles in half to enclose, and press down the edges to seal securely.

    Place calzone on lightly greased or sprayed with canola oil baking sheet, brush the top of each turnover lightly with oil or spray each lightly with canola oil spray. Bake at 425 degrees for 15 to 20 minutes, or until puffy and toasted around the edges.

    Variations: Another good filling is one that contains ingredients usually found in pizza topping. On each dough round, spread some tomato sauce and top it with sauteed chopped green peppers, onions, mushrooms, chicken or anything else to your liking.
