List of Ingredients
o 1/4 cup oil, divided
o 1 whole 3 lb. chicken, cut into 8 pieces
o 3/4 cup all-purpose flour
o 2 red onions, cut into strips
o 2 cups water
o 1 cup cider vinegar
o 1/2 tsp. salt
o 1/4 tsp. pepper
o 1 tsp. red pepper flakes

10. Heat 2 tbs. oil in a large skillet and saut� onions until tender, remove and set aside
11. Mix flour, salt and pepper in a large plastic bag
12. Add chicken and coat very well and let sit in a sealed gab for 10 minutes
13. Heat remaining oil in the skillet and brown chicken on all sides
14. Remove chicken from skillet and place in a deep roasting pan
15. Heat reserved flour in skillet over medium-high heat, stirring constantly to make a dark roux
16. Slowly stir in pepper flakes, water and vinegar and mix very well
17. Add reserved saut�ed onions and mix well
18. Pour over chicken
19. Cover dish and bake in a 350 degree oven for 45 minutes or until chicken is cooked through (no pink inside)
If gravy is too thick add water to the pan a little at a time until desired consistency is reached.
