    Escalloped Potatoes

    List of Ingredients

    2 Tbs minced parsley
    1 1/2 cups onions, thinly sliced
    4 1/2 cups potatoes, thinly sliced
    3 tsp salt
    3 Tbs butter
    2 Tbs plus 1 tsp flour
    1 3/4 cups milk
    1/8 tsp pepper
    1/8 tsp paprika

    Recipe

    Bring 1" of water to boil in a pan; add parsley, onions, potatoes and 2 teaspoons salt. Boil for 5 minutes; drain. Melt butter, blend in flour, pepper, and remaining teaspoon of salt. Add milk and cook until thickened, stirring constantly. Combine vegetables and cream sauce; place in a shallow casserole and bake, uncovered, at 400 degrees for about 35 minutes. Cheese or bread crumbs may be put on top if desired.

    Serves 4 to 5.
