    Sort of like “Rice A Roni,” only a lot better!

    List of Ingredients




    2 T butter
    ¼ cup finely chopped onion
    ½ cup finely diced celery
    Pinch of seasoned salt (Lowry's)
    1 box of Mrs. Grass chicken noodle soup mix
    1 ½ cups of regular long grain rice (raw)
    1 small can of mushrooms
    3 cups of water
    ½ cup sliced or slivered almonds, optional, for garnish
    Fresh chives and/or parsley, chopped, optional, for garnish

    Recipe



    In a large skillet, melt the butter over medium-high heat. Add the onions and celery along with the seasoning salt and cook until just softened, about 3 minutes or so.

    Add the rice and the dry noodles from the soup mix to the skillet and continue to sauté until the rice and noodles have toasted up a little bit.

    Add the water, mushrooms, and the seasoning packet from the soup mix. Stir well. Bring to a boil, reduce the heat, and simmer with a lid on for about 12 minutes, until all the liquid is absorbed. DO NOT STIR.

    Remove the pan from the heat, keep the lid on, and set aside for 5 minutes.

    Fluff the rice up with a large fork, and stir in the almonds and chives/parsley if using.
