    A souffl� rises because of air bubbles that are trapped in the egg whites
    as they are beaten. When the souffl� is placed in the oven the air in the
    bubbles expand causing the souffl� to rise. If the souffl� is punctured or
    shaken it will cause a premature release of the air and the souffl� will
    collapse and is ruined
