Marinated Whole Mushrooms
7 lbs whole small mushrooms
1/2 cup lemon juice
2 cups olive oil
1 1/2 cups white vinegar
1 Tbsp oregano
1 Tbsp dried basil
1 Tbsp. pickling salt
1/2 cup finely chopped onion
1/4 cup diced pimento
2 cloves garlic, each cut into 4 pieces
25 black peppercorns
Recipe
If mushrooms are over 1 1/4 inch in diameter, cut them in half. Trim
stems and bad spots and put into a large pot. Add lemon juice and
water to cover. Bring to boil and simmer for 5 minutes. Drain
mushrooms. Mix olive oil, vinegar, oregano, basil and salt in a sauce
pan. Add onions and pimentos and heat to boiling. Put 1/4 piece of
garlic and 2-3 peppercorns in a half pint jar. Fill with mushrooms
with hot, well mixed oil/vinegar solution, leaving 1/2 inch headroom.
Adjust lids and process in a boiling-water-bath for 20 minutes
