    Pear Shaped Croquette Potatoes

    2 C. Water
    1 C. Milk
    2 � C. Idaho Potato Mix
    4 ea. Egg Yolks
    � C. Grated Parmesan Cheese
    1 Pinch Nutmeg
    Salt and Pepper-to taste
    For Breading
    2 Whole Eggs
    3 C. Bread Crumbs (I like unseasoned ones)
    2 C. All Purpose Flour
    Vegetable oil for frying
    8 ea. Whole Cloves


    In a medium sauce pot bring water and milk to a boil. Then add potato mix slowly till well mixed. Add egg yolks one at a time. Then add parmesan cheese, nutmeg, salt and pepper to taste. Put potato mixture into a bowl and refrigerate till cool. Divide mixture into 8 mounds and roll into balls. Take each one and shape like a pear.
    In three different bowls:
    1st bowl wisk egg and milk together
    2nd bowl add flour
    3rd bowl add bread crumbs
    Take pear shaped potatoes and dip in flour, then in the egg and milk mixture, then in the bread crumbs.
    Heat fry oil to 350 degrees.
    Fry until golden brown. Let stand one minute, then push clove into the top to make it look like a star for your pear.
