    Sweet Potato Canoes

    2 sweet potatoes, about 1 lb
    1 cup onion, chopped
    1 cup fresh basil, chopped
    1 1/2 cups feta cheese, crumbled
    1/2 tsp garlic powder

    Recipe



    1. Bake potatoes at 450�F (230�C) for 45�60 minutes, or until tender. Cool. Cut in half lengthwise. Carefully scoop out meat, leaving shell intact. Reserve shells for stuffing later.
    2. Mash the sweet potatoes. Add onion, basil, cheese, and garlic powder. Mix lightly to blend. Restuff shells with the potato filling.
    3. Bake at 350�F (180�C) for 30 minutes, or until heated through.

    Makes 4 servings.

    Tip:
    To avoid last-minute preparation, cook the potatoes and prepare the filling ahead, then stuff and bake at dinner time.
