Vidalia Onion Pie
1 stick butter or margarine
2 pounds Vidalia onions, thinly sliced
1 cup sour cream
3 eggs, beaten
1/4 t. salt
1/2 t. pepper
Dash or 2 of hot pepper sauce
Unbaked 9" or 10" pie shell
1/4 cup grated Parmesan cheese
Heat butter in large skillet over medium heat until bubbling; add onions and cook until nice and tender. Combine sour cream, eggs, salt, pepper and pepper sauce. Stir into onions. Pour into shell and sprinkle with Parmesan cheese. Bake at 450 for 20 minutes. Reduce heat to 325. Continue baking for another 20 minutes. Let stand a few minutes before serving. Serves 6 as a main dish and 12 as an appetizer.
