    BANANA-BLUEBERRY MUFFINS

    List of Ingredients

    (Yield: 1 dozen)
    2-1/4 cups self-rising flour
    1/2 teaspoon ground cinnamon
    2 bananas, quartered
    2 eggs
    2/3 cup firmly packed brown sugar
    6 tablespoons butter or margarine, melted
    1 teaspoon vanilla extract
    1 cup blueberries
    1/4 cup sugar
    1 teaspoon grated lemon rind


    Recipe

    Preheat oven to 400�F. Spray 12 muffin cups with non-stick vegetable spray.

    In a medium bowl, combine flour and cinnamon.

    In a large mixing bowl, beat bananas until mashed. Add egg, brown sugar, butter, and vanilla, beating until well
    blended. Add flour, stirring until just moistened. Stir in blueberries. Spoon into prepared muffin cups, dividing
    batter equally.

    In a small bowl, combine sugar and lemon rind; sprinkle over muffins.

    Bake 20 to 22 minutes or until golden brown. Serve hot.
