    BLUEBERRY OAT MUFFINS

    List of Ingredients




    1 cup Oats
    1 cup Buttermilk or sour milk (instructions below)
    1 cup Flour
    1 teaspoon Baking powder
    2 teaspoon Baking soda
    2 teaspoon Salt
    w cup Brown sugar, lightly packed
    1 Egg, beaten
    4 cup Butter, melted
    1 cup Blueberries, or your favorite fruit, fresh or
    frozen, thawed and well blended
    Sour Milk
    Add lemon juice to 1 cup measure. Fill to 1 cup mark with milk.

    Muffins
    Combine oats and milk in small bowl. Let stand. Combine flour, baking powder, baking soda, salt and brown sugar. Stir well to blend. Add egg and melted butter to oat mixture. Mix well. Add oat mixture all at once to dry ingredients. Stir just until all ingredients are moistened. Gently fold in blueberries or your favorite fruit. Fill well greased muffin tins w full. Bake at 400� F for 15 to 22 minutes.


    Makes 1 Dozen Muffins
