    Old Fashioned Sour Cream Muffins

    6 Tbsp. margarine or butter
    1 1/2 c. sugar
    1/2 tsp. salt
    4 eggs
    1 3/4 c. sour cream
    2 3/4 c. flour
    1 tsp. soda
    1/4 tsp. grated nutmeg
    3 Tbsp. granulated sugar or
    cinnamon/sugar for topping

    Cream with your electric mixer at high speed, the
    margarine or butter, sugar and salt. Beat for 3 minutes until
    very smooth and creamy. Make a hole in the middle and add
    eggs; beat them in the well until they are thoroughly com-
    bined and a light lemon color. Beat them into the creamed
    mixture and add the sour cream. Beat to combine the cream.

    In another bowl mix with a fork, the flour, soda and nutmeg.

    Grease your muffin tins or use muffin paper cups.
    Preheat the oven to 425 degrees.
    Quickly mix the wet and dry ingredients. As soon as the dry
    ingredients are thoroughly moist.
    Fill 3 dozen muffin cups half full. Sprinkle each muffin with 1/4
    teaspoon granulated sugar or the cinnamon/sugar mixture. Bake
    for 15 minutes. Let cool for 2 minutes then loosen from the
    pan. Serve them hot!

    Note: To turn these into memorable blueberry muffins,
    fold in 2 cups floured fresh or frozen dry blueberries.
    This will give you about 6 extra muffins.
