Gourmet Shepherd's Pie
4 lg. potatoes, cubed
1 lb. ground beef
2 garlic cloves, minced
1 tsp. oregano
1 cup mushrooms, sliced
1 (14oz.) can cream of mushroom soup
1 cup frozen corn
1 cup creamed corn
1 tsb. butter
1/4 cup milk, room temp
1 tsb. parsley, minced
1/4 tsp. paprika
Recipe
Place potatoes in saucepan and cover with water. Bring to a boil, simmer 20 minutes or until fork tender. Saut� ground beef until browned, drain off excess fat. Add �-minced garlic, saut� 1 minute. Add mushrooms, saut� 2 minutes. Add oregano, mix well. Add cream of mushroom soup, mix well. Layer in bottom of casserole dish. In mixing bowl combine frozen and cream style corn. Layer over hamburger mixture. Drain potatoes and put in bowl. In same pan melt butter, add remaining garlic and saut� until tender, approx. 2 minutes. To the pan add potatoes, milk, & parsley. With hand mixer, whip potatoes until smooth. Layer whipped potatoes on top of corn mixture. Sprinkle with paprika. Place in a 350 oven for 20 minutes. Serves 4
