    List of Ingredients




    1 fryer chicken cut up (3-3 1/2 lbs)
    1 cup buttermilk
    1/2 cup flour
    2 tbsp chopped parsley
    1 tsp salt
    1 tsp dried thyme leaves
    dash black pepper


    Biscuits
    1/3 cup melted butter and fat from frying chicken
    2 cups flour
    3/4 cup buttermilk
    2 tsp baking powder
    1/2 tsp baking soda

    Recipe



    For biscuit, mix flour, baking powder and baking soda. Stir in butter and fat. Add buttermilk to make a stiff dough.
    Knead lightly.

    Preparation:
    1.) Cut up chicken into pieces. Place in bowl. Pour buttermilk over chicken. Marinate for 2 hours.
    2.) In another bowl, combine flour, parsley, salt, thyme leaves, pepper.

    3.) Remove chicken from buttermilk. Pour buttermilk from marinating chicken in a microsafe baking dish. Roll chicken
    in flour mixture.

    4.) Place chicken pieces on top of buttermilk in baking dish. Dust with a little paprika for better color.

    5.) Microwave at HIGH power for 3 m minutes. Let sit for 3 minutes.

    6.) Microwave at HIGH power for another 3-4 minutes or until chicken tests done. (juices should run clear when
    pierced with a tester).

    7.) If not done to your liking, let rest a few minutes and microwave again at MEDIUM HIGH power for 4-6 minutes.

    8.) In the meantime. prepare dough for biscuits. Roll out on floured board. Cut into small rounds.

    9.) Place them on microsafe baking sheet.

    10.) Microwave at HIGH for 1 1/2 -2 minutes until done. The biscuits will not get any color on top. Brush with a little
    soy sauce or sprinkle paprika for color, if desired.
