    Pineapple Puffs

    2 package Pepperidge Farms Pastry Puffs
    1 can (20 ounces) Dole crushed pineapple
    � cup granulated sugar
    2 tablespoons cornstarch
    � teaspoon lemon juice
    � cup confectioner's sugar
    � teaspoon pure vanilla
    3 tablespoons water (add more if needed)

    Recipe



    To make glaze for topping: Stir together confectioner's sugar, vanilla and water until smooth. Add additional water tablespoon at a time if needed. Set aside. To make filling for pastry: Combine granulated sugar and cornstarch in saucepan. Stir in lemon juice and pineapple. Bring to boil. Reduce heat to low and simmer 2 to 3 minutes. Remove from heat and set aside. Bake pastry puffs as directed on package. Remove tops, pull out dough with fork and fill each puff with pineapple mixture. Replace tops and sprinkle generously with glaze.
