Maple Basted Pork Loin with Roasted Garlic Mashed Potatoes
one 8oz. piece of pork loin
for Marinade
1/2 cup real maple syrup
1/2 cup low sodium soy sauce
1 shallot
freshly ground pepper
for Garlic Mashed Potatoes
3 Idaho russet potatoes
3/4 cup heavy cream
1/2 stick butter
3 tbsp olive oil
3 cloves garlic
salt & pepper to taste

Potatoes
Peel and boil potatoes. Roast garlic in olive oil then puree in blender. Add all ingredients and blend until smooth.
Pork Loin
Marinate in refrigerator for at least 4 hours prior to cooking. Pre-heat oven to 400 degrees. Heat olive oil in a metal frying pan and sear all sides of pork loin. Pour remaining marinade over pork loin and baste in oven for 5 to 6 minutes on each side. Serve with garlic mashed potatoes and a fresh vegetable.
