List of Ingredients
4 skinless, boneless chicken breasts (pounded thin)
1 pkg. fresh spinach (cooked, drained, and chopped)
2 carrots, cut into match stick-size pieces
garlic paste
1/2 cup flour
2 teaspoon olive oil
1/4 cup mozzarella
Recipe
Rub each chicken breast with garlic paste on one side. Heat large skillet with 1 teaspoon of olive oil. Dredge chicken in flour and saut� until chicken is golden brown on both sides. Add salt and pepper to taste. Place chicken on baking dish and bake for 20-25 minutes at 350 degrees. Saut� carrots in 1 teaspoon of olive oil until crispy brown. Set aside. Remove chicken from oven. Place a portion of spinach on each chicken breast, then a little carrots on top, then a little mozzarella cheese on top. Return to oven until cheese is melted
