    List of Ingredients




    2 tbsp. butter
    1/2 onion, finely chopped
    2 cans cream of potato soup, undiluted
    1/4 tsp. pepper ( red or black)
    3 1/2 c. milk (can use skim)
    1-1 1/2 pounds medium shrimp peeled and deveined ( or substitute 3 c. chopped chicken)
    1 c. shredded Monterey Jack cheese
    Oyster crackers (optional)

    Recipe



    Melt butter in large pot over medium heat, add onion and saute 8 minutes or until tender. Stir in cream of potato soup, milk and pepper, bring to a boil. Add chopped shrimp, then reduce heat and simmer, stirring often fo about 5 minutes or until the shrimp turn pink. Stir cheese in until melted. Garnish with oyster crakers and serve.
    Yield: 12 cups
