Trying to get in contact with Meryl. I have just read a long thread from 2004 on the perfect cheesecake. Meryl, did you ever find out how to make that dense NY cheesecake? I would love to get my hands on the recipe. Have never managed to get a nice solid dry-ish cheesecake from my oven. Loved to come across this cheesecake entry on finecooking.com
