- 15 ounces Cacique brand Crema Mexicana
- 12 ounces Cacique brand Manchego -- cut in 1/4" slices
- 4 pounds skirt steaks
- 5 cups cilantro -- chopped
- 1 onion -- chopped
- 3 tablespoons garlic -- minced
- 4 tablespoons lime juice
- 1 tablespoon oil
- salt and pepper -- to taste
Instructions
- Grill the steaks to desired doneness.
- To make the sauce, cook the onion, garlic, and cilantro in the oil. Add the lime juice and the Crema Mexicana. Simmer for 10 minutes and pur�e in the blender, adding salt and pepper to taste.
- Top steak with a slice of Manchego to melt, and top with sauce.
