- 6 slices bacon
- 2 tablespoons chopped onions
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup sour cream
- 2 16-ounce packages frozen corn kernels, thawed
- 1 tablespoon chopped parsley
Instructions
- Preheat oven to 350�F. Spray a 1-1/2 quart casserole with non-stick vegetable spray.
- In a large skillet, cook bacon until crisp; remove from skillet. Drain and crumble. Drain all but 2 tablespoons drippings from skillet. Add onion and saut� until tender. Stir in flour, salt, and pepper. Gradually stir in sour cream until mixture is smooth. Heat to just boiling. Add corn cook for 5 minutes or until heated thoroughly. Fold in half the bacon. Spoon into prepared casserole; sprinkle with parsley and remaining bacon.
- Bake for 30 minutes.
