It is not for those afraid of fat or sweetness, nor is it diet-friendly, but OMG is it delicious! It is soooo moist, but it does not have refrigerated batter. Thought you might like it anyway...
List of Ingredients
2 C. all purpose flour
2 c. sugar
2 tsp. baking soda
1-1/2 tsp. cinnamon
1 tsp. salt
2 c. shredded carrots
3/4 c. buttermilk
3/4 c. cooking oil (canola or veg.)
8 oz can crushed pineapple, drained
1 c. chopped walnuts
3 eggs
1-1/3 c. coconut
1 tsp. vanilla
raisins if desired
walnuts to garnish
Recipe
Grease 13 x 9 x 2 pan and lightly flour. Preheat oven to 350�. Combine flour, sugar, soda, cinnamon and salt. Add carrots, buttermilk, oil, pineapple, eggs, coconut and vanilla (raisins and walnuts if using). Stir until combined. Spread batter in pan. Bake 40-45 minutes or until cake springs back. Poke holes in top of cake while hot and pour on glaze. Frost when cool.
Glaze:
3/4 c. sugar
1/3 c. buttermilk
Frosting:
8 oz cream cheese
1/2 c. butter, softened
2 tsp. vanilla
1 box powdered sugar.
Beat cream cheese, butter and vanilla til light and fluffy. Gradually add enough sugar to make frosting consistency. Spread on cake. Top with walnuts
