    1 1/2 lbs. catfish, tilapia or your favorite fillets
    1 lb. peeled shrimp
    2 tablespoons blackened seasoning (I use Zatarain's)
    2 tablespoons mayonnaise
    2 tablespoons butter
    1 cup sliced fresh mushrooms
    1/2 cup sliced green onions
    2 (10.75 ounce) cans Campbell's condensed cream of shrimp soup

    Cut fillets into several pieces. Sprinkle with 1 tablespoon blackened seasoning. Coat with mayonnaise.

    Melt 1 tablespoon butter in a skillet on medium-high heat. Cook fish 1 1/2 minutes, carefully turn and cook another minute. Transfer to a baking dish.

    In the same skillet, melt remaining tablespoon butter over medium heat. Cook mushrooms in butter for 1 minute then add green onions, shrimp and remaining tablespoon seasoning. Cook until shrimp are pink, stirring often. Reduce heat, add cream of shrimp soup and stir until blended. Pour soup and shrimp mixture over fish in baking dish.

    Bake at 375 degrees for 30 minutes.

    This is great served over rice. Sometimes I sprinkle grated parmesean cheese on top before baking. For less spicy dish, reduce seasoning by half.
