List of Ingredients
4 medium potatoes, peeled and cubed
1 small onion, thinly sliced
1 teaspoon sugar
4 tablespoons butter, divided
1/2 cup milk (I used a little more)
1/2 teaspoon salt
1/8 teaspoon pepper (I used 1/4 teaspoon)
Minced fresh parsley, optional (I used chopped fresh chives)
Recipe
Place potatoes in a saucepan and cover with water; bring to a boil. Cook until very tender, about 20-25 minutes. Meanwhile, in a skillet over low heat, cook onion and sugar in 2 tablespoons butter until golden (and slightly caramelized� my addition here), stirring frequently. Drain and mash the potatoes. Add remaining butter, milk, salt and pepper. Stir in the onion mixture. Garnish with parsley if desired. Yields 6 servings
