    Recipe Introduction


    This is a great cold dessert and I really love it. What about you.


    List of Ingredients


    • 450g (1lb) gooseberries, apples, black or redcurrants, rhubarb, blackberries or raspberries
    • 45ml (3tbsp) water
    • 75-175g (3-6oz) caster sugar, to sweeten depending on sharpness of fruit
    • 350ml (12fl oz) fresh double cream
    • 30ml (2tbsp) fresh milk
    • Red or green food colouring (optional)
    • Chopped walnuts or chopped toasted almonds and fruit for decoration


    Instructions


    1. Prepare fruit according to type. Put into a saucepan with water.
    2. Bring slowly to the biol, cover with lid and simmer until fruit is soft.
    3. Remove from heat. Add sugar to taste. Either rub through a sieve or liquidise. Leave until completely cold.
    4. Whip double cream and milk together until light and stiff then gradually fold in the fruit puree.
    5. If fool is pale add in colour tint with food colouring, if used.
    6. Transfer to 4 sundae glasses and chill.
    7. Befor serving, add all of the nuts evenly of the 4 sundae dishes.
