    Puffets

    The original version of this recipe called for "butter the size of an egg," and other methods of measuring you might not recognize today. We've made the recipe a bit simpler by using standard measurements.

    Prep: 20 minutes Bake: 20 minutes


    2 cups all-purpose flour
    1 Tbsp. baking powder
    1 Tbsp. sugar
    1/4 tsp. salt
    1 egg, slightly beaten
    1 cup milk
    3 Tbsp. butter, melted
    3/4 cup snipped dried tart cherries
    2 Tbsp. butter, melted
    2 Tbsp. sugar
    1/4 tsp. ground cinnamon

    Preheat oven to 400 [degrees] F. In a large mixing bowl stir together flour, baking powder, the 1 tablespoon sugar, and the salt. Make a well in the center of the flour mixture; set aside.

    2. In a small bowl combine the egg, the milk, and the 3 tablespoons melted butter. Add to the flour mixture along with the cherries. Stir just until dry ingredients are moistened. Divide batter among 12 greased 2 1/2-inch muffin cups. Bake about 20 minutes or until tops are golden brown.

    3. Remove from pans. Brush tops of warm puffets with the 2 tablespoons melted butter. Dip tops in a mixture of the 2 tablespoons sugar and the cinnamon. Serve warm. Makes 12 puffets.
