    Spoon Bread

    4 eggs, divided
    4 cups sweet milk
    1 cup white cornmeal
    1/2 cup butter, melted, cooled
    2 Tbsp. sugar
    1 tsp. salt

    � Beat 4 egg whites until stiff. Set aside.
    � Heat milk just to boiling point. Still on heat, using whisk, stir in cornmeal until smooth.
    � Remove from heat, immediately beat in butter, sugar and salt, then the beaten egg yolks.
    � When smooth, fold in stiff egg whites.
    � Spoon into buttered casserole.
    � Place casserole on middle rack of oven heated to 350�.
    � Place a shallow pan with 1 inch hot water in bottom rack.
    � Bake for about 45 minutes, until light brown and puffed.

    This early American recipe is one of those things they�ve been making in the back woods forever. It may be the best spoon bread you�ve every tasted
