    List of Ingredients







    Casserole of Country Sausages and Sweet Green Peppers



    Ingredients

    670 gr. sweet green or red peppers
    60 ml olive oil, or good vegetable oil
    1 teaspoon oregano
    500 gr. country-style sausages, such as italian, Toulouse or Greek
    230 gr. fresh tomatoes, peeled and sliced, or 1200 gr. can tomatoes, chopped
    salt and black pepper

    Serves 4 persons!

    Rinse, core and slice the peppers into 4 large pieces. In a saucepan, sautee the peppers in the olive oil and the oregano. Slice the sausages thickly and fry them in a frying pan for 4-5 minutes. Sausages of this kind exude quite a lot of oil or fat, so avoid any additional oil. Using a slotted spoon, lift the sausages into the saucepan with the peppers, add the sliced tomatoes, stir, season, cover and simmer for 20 minutes. Do not add water unless the fresh tomatoes (if used) are not very juicy. In the latter case, add tiny amounts of water when needed. The sauce should be thick and oily. As this dish is quite rich,
    a small amount is enough.
